The Kanetsune knife from the 800 series is slightly smaller than the regular Santoku and Nakiri. This knife is very popular and fits very well in the hand. The clad blade is made of Takefu Shiro-2 high carbon steel. Its cutting core is sandwiched between SUS410 stainless steel, which provides excellent sharpness.
