The Japanese Kanetsune nakiri knife is suitable for vegetables. The blade is made of Takefu Shiro-2 high carbon steel, the blade core is sandwiched between SUS410 stainless steel which ensures high sharpness. The high carbon blade is very hard and brittle, so the knife is not suitable for chopping it could break a tooth
