The limited edition of 800 Kanetsune Gyutou Fluorine is made of AUS-8 stainless steel with a hardness of up to 58 HRC. A stable fluorine coating covers the blade to ensure a very smooth surface. Thanks to it, dirt sticks to the knife much less. The same technology is used, for example, on camera lenses. The handles are made of plywood.
