The AccuSharp Precision 3-Stone Sharpening Set allows you to hand sharpen your knives at a consistent, precise and fixed angle. This set provides a quality sharpening experience designed to maintain precise results for your specific type of knife. The AccuSharp Precision Sharpening Kit features six angle options and three stones to keep your knife's edge razor sharp. The knife clamp has settings for 11, 15, 19, 21, 25 and 30 degree angles.

Preset grinding angles and their use:
It is generally recommended to copy the blade angles as they are set from the factory. 
- 11° angle: extremely fine edge, recommended for cutting soft materials such as scalpels, razors and similar products.
- 15° angle: very fine edge recommended for Asian type knife blades.
- 18° angle: this angle is for basic kitchen knives or for filleting knives.
- Most western knives can usually be sharpened at this angle,
- not recommended for harder materials.
- 21° angle: angle recommended by Accusharp. This angle is recommended for most western knives that can be sharpened at this angle.
- 25° angle: ideal for more durable blades such as axes and cleavers or other outdoor knives.
- 30° angle: extremely durable blades. This angle on knives is used for strong tools that are used in very durable materials.

Instructions for use, the original of which is enclosed with the product:
1. Carefully secure the knife in the clamp by tightening the front large screw until the knife is stable (Fig. 1), tighten the rear screw until the knife does not move at all(Fig. 2). For knives shorter than 18 cm, secure the clamp in the middle of the blade spine. For small blades, use a smaller notch in the front of the clamp. If your blade is longer than 18 cm, sharpen the blade in sections. Always finish sharpening by polishing and honing with a FINE (fine) stone.
2. Insert the stick into the hole for the angled sharpening guide (fig. 3), see angled guide. If you are not sure what angle to use, follow the generally used angles for the type of knife. 
3. To sharpen the knife, keep the stone moving smoothly upward from the blade. Do not sharpen back and forth or move side to side, but simply lift the stone back to the starting level and start again (Figure 3). If the blade becomes loose during sharpening, stop sharpening immediately. Secure the blade and start again.
4. Once you have sharpened one side of the knife, simply rotate the knife holder and continue sharpening the other side. 
Important: Maintain a consistent number of strokes and pressure force on both sides of the blade.
Note: It is not necessary to use honing oil with this product, however, if the stones begin to become smooth when sharpening, it may be necessary to use a small amount of oil to clean out the pores in the stone. The honing oil will naturally flush out each pore, then wipe dry.
DO NOT use honing oil on Accusharp diamond products.
