The filleting knives feature a smooth edge and a narrow, flexible blade (16-20 cm long). The filleting knife is often used to cut meat in the direction of the cutting board. The filleting knife is designed for activities requiring precision. It needs to be as whole as possible so that, for example, it can be used to remove bladders. The narrow blade follows the fish's spine quite closely.
