Rockstead Knives
Japanese ROCKSTEAD knives are the absolute world leader in this field and are at the top of the current steel production possibilities.
ROCKSTEAD knives also have unique blade shapes, taken from samurai swords. Usually convex ground, or even a combination of convex and flat ground. ROCKSTEAD blades thus use the traditions of samurai sword making to create the perfect knife.
The mirror-smooth surfaces of the blades make the most of the properties of steel. The whole polishing process is very tedious, with 400, 600, 800, 1200 and 2000 grit paper being polished. If a scratch is visible on the blade at the end, the whole process is repeated from the beginning. There is no similarly finished blade to the ROCKSTEAD knives. Comparing the micrographs, the difference between the classic machine steel of the conventional manufacturers is obvious.
